Turkey Stuffed Peppers with Cucumber Salad

Hi friends,

This recipe is forever a keeper! It’s a classic twist to the stuffed peppers, but I use ground turkey instead of ground beef and less cheese. It’s very filling, but you never have to feel guilty eating it because it’s filled with nutritious ingredients such as brown rice and a lot of vegetables. Here’s the list of ingredients:

stuffed peppers ingredients:

  • 5 or 6 green and red peppers mixed
  • onion, thinly chopped
  • green and red peppers, chopped
  • carrots, chopped
  • 3/4 pound of ground lean turkey
  • brown rice, cooked
  • olive oil

cucumber kale salad ingredients: 

  • cucumbers, chopped
  • tomatoes, chopped
  • onions, thinly chopped
  • lime juice
  • feta cheese
